沼本は山口県岩国市で生まれ育ち、
１５歳の時に兵庫県姫路市にて食肉の修行をスタート。
和牛のカット技術は「沼本カット（Numamoto Cut)」と呼ばれています。
このチャンネルでは、幻のブランド和牛「高森和牛」を使って
肉を捌いています。
高森和牛は銘酒「獺祭」の酒粕を餌に混ぜており、香り高い高級な和牛です。
現在は山口県産の和牛の統一ブランド「やまぐち和牛燦（きらめき）」の
普及にもつとめています。
